Shepherd’s pie

The number one must-try food for me, at any Irish pub, is the Ireland’s most beloved traditional dish – shepherd’s pie. I have always liked shepherd’s pies but never made it myself until I recently discovered just how simple and quick it is to prepare.

Recipes vary widely but the basics include ground lamb, mashed potatoes and veggies. Even though shepherd’s pies are originally made with lamb meat, ground beef will work just fine. I use ground beef since it’s readily available. As far as the veggies, I use the classic mix of peas, carrots and corn kernels.

A lot of people would probably bake it in the oven but I just keep it simple and prepare it on the stove. I don’t think the traditional way is to use cheese over the mashed potatoes but I do add some cheese right before taking it out so it melts on the top which gives it a little kick.
